SINGAPORE: Two-Michelin-starred Restaurant Andre will close its doors permanently on Feb 14 future year.
In a assertion on Tuesday (Oct 10), chef Andre Chiang – the gentleman powering the fine-eating outfit in Tanjong Pagar – explained the go will come soon after a determination to re-prioritise his skilled lifetime.
He has asked for to return his Michelin stars, and to be excluded from the 2018 version of the Michelin Tutorial Singapore.
“I’m a perfectionist and for the previous 30 yrs of my job, I’ve been searching for that unrealistic ‘moment of perfection’: A few Michelin stars, World’s Leading fifty restaurant … Until finally now I realised, at this minute – it is perfect as it is,” Mr Chiang explained in a assertion on the restaurant’s web-site.
“I want to go again to exactly where I began, I want to go again to cooking, have a balanced lifetime and cook dinner happily.”
Mr Chiang, who was born in Taiwan and began cooking at 13, signalled that he will probably go again to Taipei to target on educating and acquiring younger cooks, and cook dinner at his restaurant Uncooked.
He has also asked for that Uncooked not be bundled in any future Michelin Guides for Taiwan.

Mr Chiang began his culinary journey at Le Jardin de Sens in Montpellier, France, education beneath Jacques and Laurent Pourcel. Nine yrs later, he became head chef of the a few-starred Michelin restaurant.
Mr Chiang has also labored beneath France’s most respected cooks such as Pascal Barbot, Pierre Gagnaire, Joël Robuchon and Michel Troisgros.

Restaurant Andre, which opened in Oct 2010, delivers only 30 seats each working day.
The restaurant focuses on serving “spontaneous culinary art” impressed by Southern French nouvelle cuisine.
